Abstract

This study investigates the effects of various factors, such as the chemical composition of red bean samples, soaking temperature and time on water absorption, and steaming temperature and time on sensory quality and protease enzyme production capability of certain commercial Aspergillus oryzae strains when cultured on a red bean medium for applications in red bean sauce production. The research results determined that the protein content of dry red bean samples ranged from 17,21 ± 0,48% to 22,64 ± 0,40%, with water absorption reaching 83,23% when soaked at 30 °C for 8 h. When steamed at 110 °C, Aspergillus oryzae strains from the MD2 mold strain produced an average protease activity of 248,71 ± 2,72 UI/g.
