THU NHẬN POLYPHENOL TỔNG TỪ VỎ HỒNG VỚI SỰ HỖ TRỢ CỦA DUNG MÔI EUTECTIC SÂU

Polyphenol trong vỏ hồng (Diospyros kaki L.) là nhóm hợp chất có giá trị sinh học, đặc biệt liên quan đến khả năng chống oxy hóa, nhưng nguồn nguyên liệu này vẫn chưa được khai thác hiệu quả. Nghiên cứu được thực hiện nhằm đánh giá khả năng sử dụng dung môi eutectic sâu (deep eutectic solvent, DES) để thu nhận polyphenol từ vỏ hồng, đồng thời xác định điều kiện chiết thích hợp và đánh giá hoạt tính chống oxy hóa của dịch chiết. Kết quả cho thấy hệ choline chloride/acid lactic (ChCl/LA) với 30% nước bổ sung, tỷ lệ nguyên liệu/dung môi 1/40 (w/v) và thời gian xử lý 120 phút ở 70 °C cho hiệu quả tốt nhất. Ở điều kiện này, hàm lượng polyphenol tổng đạt cao gấp 6,8 lần và hoạt tính bắt giữ gốc tự do DPPH cao gấp 1,6 lần so với khi sử dụng ethanol 70% trong cùng điều kiện chiết. Phân tích FTIR cho thấy quá trình xử lý bằng DES làm thay đổi một số đặc trưng cấu trúc của dịch chiết, thể hiện qua sự xuất hiện và thay đổi cường độ của các dải hấp thụ liên quan đến nhóm chức. Những kết quả thu được cho thấy ChCl/LA có khả năng nâng cao hiệu quả thu nhận các hợp chất polyphenol từ vỏ hồng và có thể được xem xét như một hệ dung môi theo hướng thân thiện hơn với môi trường trong quá trình khai thác hợp chất có hoạt tính sinh học từ phụ phẩm thực vật.
